The following is our suggestion for a 3-course party menu.

Starter – choose from:
– Smoked scallops – cauliflower mayo – hazelnuts in browned butter
– Warm hot-smoked salmon on creamy spinach, lemon caviar and crispy garnish
– Beef carpaccio – truffle mayo – pickled beech mushrooms – herbs – ryebread chips
– Baked cod – cauliflower purée – hazelnuts – capers – browned butter – herbs
– Iberico pork jowls – apple chili chutney – crispy chorizo
Main course – choose from:
– Slow-cooked fillet of beef – rillettes – gremolata – piémontaise sauce
Optional extra: Tenderloin of beef or veal – (+60/head)
– Flank of veal – purée – calvados sauce
– Chicken ballotine – pointed cabbage in beurre blanc – calvados sauce
– Filet mignon – Parma ham – seasoned breadcrumbs – coppa – mushrooms duxelles – sage or truffle sauce
