Alternatively, the menu can be composed at the chef’s discretion

For short stays, the menu is predetermined by the chef as part of the experience.
Allergies or special dietary requirements must be communicated no later than 3 days prior to arrival

Beetroot-cured salmon
Frisée lettuce – blood orange jelly – orange pearls – sourdough crisps

Pea-miso purée – sweet pickled apples – mushroom mayo – pine nuts – pickled beech mushrooms

All starters are served with homemade bread and salted butter

Main Course:
Brined duck breast
Parsnip purée – roasted hazelnuts – pickled Borettane onions – potatoes tossed in almonds and orange butter – Canard à l’Orange sauce

Pan-seared venison fillet – celery root purée – glazed chestnuts – crispy kale – pickled red onions – lingonberry compote
Served with Pommes Anna prepared with tomato–mascarpone butter and a game sauce enriched with pancetta and beech mushrooms

Classic Beef Wellington made with the finest tenderloin of young beef. Baked in golden puff pastry with mushroom duxelles and Serrano ham.
